Hopefully Better Next Time
I was fully prepared to really love this joint. Everyone raved about the old location. It had developed a cult-like following, and the chef is seen as a local rebel culinary hero of sorts.
The new location is a real deal Mom and Pop operation - the chef is cooking in a wood fired pizza oven on wheels, selling pizza out of some spare space in a corner convenience store. The descriptions on the menu let you know this is authentic artisinal pizza prepared lovingly by a proud and creative professional with a sense of humor.
So what's not to love?
In the dark of winter, we ordered two different pies and were disappointed in each. We had the Margherita and the Pepperoni, two basic tomato-based pizzas, and both were burned, dry and largely tasteless. Maybe our expectations were built up because of the clever descriptions and hype, but the spareness of ingredients resulted a huge let down.
I will try Bono again, in the hopes that it was just so damned cold and dark that night that the chef just couldn't meet his normal standards. And you have give the proprietor credit for perseverence in pursuing his dream and obviously his entreprenourship. I really want to like this place because it's a great story - just not great pizza, at least the night I tried it.
Closed on Sunday (which is pizza night for us...)
